Thursday, November 27, 2008 4:00 No CommentsI spent the remainder of my day helping my sister get things ready for Thanksgiving tomorrow. We listened to music and chatted while we chopped, peeled, sliced, rolled, mixed, stirred, and everything in between. I think she’s in good shape and shouldn’t have to get up any earlier than when the turkey needs to go in tomorrow morning. I came home and cut up all the fruit for the fruit salad and I got everything ready for the Apple Bread Pudding which I’ll finish off and cook in the morning. Dinner was tough to decide on tonight. I wanted to go as far from turkey and sides as I could so Mike and I had veggie (pepper, onion, mushroom) and chicken quesadillas. We had vegetarian refried beans, homemade guacamole and black bean & corn salsa on the side for dipping. It was a long day of work in the kitchen but because of that I should be able to relax and enjoy the holiday with my family. While at my sister’s we had some white bean dip and reduced fat wheat thins…I was in charge of cutting several cheeses for the antipasto plate and I may have snuck a few pieces of that as well (ha!).

Squeeze in a run

Thank goodness for Dora the Explorer, apple juice, and snacks today. Because of these things, I was able to squeeze in a quick 30 minute run and finish out the day with a smile. Tomorrow morning at 9am is the 5k Turkey Trot. I’m excited to run with my family, I just hope it’s not too cold (layers, layers, and more layers). Then it’s turkey time. HAVE A VERY HAPPY THANKSGIVING!!!! There is so much to be thankful for this year. Enjoy
