PBB (breakfast 2.19.09)

I stayed up way too late last night and I am struggling a little this morning because of it but I am glad I got a lot done in those wee hours of the morning. Today will be much like yesterday was, I don’t have any big plans so I will be staying around the house hoping the rain clears out so that we can take a walk. I already have my dinner ingredients so there is no need to go to the grocery store but I think I may have to take a ride to the coffee shop for a latte at some point to break up the day and get a much needed boost! For breakfast this morning I had peanut butter on whole wheat toast and I topped it with a sliced banana because I was all out of jelly. The banana was a nice sweet addition to the breakfast and I got some fruit in so it’s probably not a bad thing to do more often! I also had some skim milk on the side. Have a great day!

Long, Slow Afternoon (dinner 2.18.09)

The busy morning I had led to a long, slow moving afternoon. Mike is working late so that makes the day drag on. I made dinner for us but I had to eat mine alone because I was too hungry to wait for him. I felt like I would just start snacking aimlessly on things if I waited any longer so I decided to go ahead and have the meal instead. I made the Cavatappi with White Beans, Spinach and Asiago — and as planned I added roasted garlic chicken sausage. The recipe does not call for any cooking (except the pasta) but since I used the sausage I first sauteed that in olive oil with fresh garlic and actually added the bean, spinach and cheese into the mix to warm it all up then I tossed it with the pasta as instructed. It was a very tasty meal and actually pretty cheap to make too. You could easily use frozen spinach if fresh is not available or if you want to save time and money. I already put Will to bed so I am going to try to do work for a few hours…I hope I have the stamina to do so!
