Pick a Pasta (dinner 4.1.09)

This week is flying by for me. It's already almost Thursday and I have things to get done still! I hear we are getting some rainy weather so that should keep me indoors these next couple of days. I am weak when it's nice outside...going for a walk always beats out doing work, which is why I don't get nearly as much sleep as I should (work has to get done later). On the way home from my meeting I stopped at the store for dinner ingredients. I didn't have a plan in mind going in there, I just knew I was getting pasta. I went to the pasta aisle and picked a shape we have not had in a while -- I chose manicotti and then realized I have never made manicotti before (we usually do lasagna or stuffed shells). I turned the box around though and there was a recipe right on it so I used that and went home and made them.

I just made one addition to the recipe - I diced some portobella mushroom chicken sausage small and added that to the filling. I like how this turned out and I think I'll add the recipe to my cookbook.

I also had a salad with dinner but I forgot to take a picture of it...it was late and I was hungry. This afternoon I had half of a PB&J sandwich -- I wanted to stop for a latte but I didn't have time and all I had was a $5 in my wallet which is off limits (savings). Maybe tomorrow I'll get one if I leave the house.
