Last Lecture (breakfast 4.21.09)

Today is my last lecture for my Food Science class. We have a review next week and the final exam the following so it’s not over yet but it’s definitely wrapping up. I am going to miss my Tuesdays out of the house, as hectic as they are I really enjoy the teaching and the challenge to continue learning myself. For breakfast I ate a healthy muffin and some strawberries at home and I am sipping on a nonfat latte right now. I am definitely going to miss that part of Tuesdays too! Have a good day!

It ended up being a very productive day off for me. Mike was around during the day so he spent time with Will and I was free to do as I needed / wanted to. Mike went to the Celtics game in the evening and Will fell asleep an hour earlier than he usually does so I had a quiet night to myself too. I am wrapping up a few loose ends for my class but we are basically done in a couple of weeks. I mostly have grading to do at this point so I am staying on top of that so that my grades are turned in to the university on time. I was dining solo tonight and thought I would have a can of soup but I found a small dish of stuffed shells in the freezer and they seemed more appealing. I heated them up and also had some steamed green beans with it.

This afternoon I enjoyed a cup of tea and a homemade muffin (that a friend made for me) as a snack. The muffins were really healthy but very tasty…I have two more left and I am definitely having one of them for breakfast tomorrow!

I went to the store today and saw strawberries on sale – 2 pounds for $2.99. I had to buy them since that’s the normal price for half that amount…but now I am wondering what I can do with them before they go bad. I had some for dessert tonight and I’ll use them as meal parts and snacks as best I can but please share your favorite strawberries uses with me! Thanks!
