Morning Walk Duty (breakfast 4.1.09)

Today Will is 5 months old – I can’t believe it! I think each month that goes by gets a little easier and we are falling into a pretty good routine. That YouTube Fish Taco video kept me up late last night — I am not exactly proficient in creating them yet but I am getting better. It’s been a busy morning because Mike was out of the house very early so we were responsible for the morning dog walk. It actually felt good to get that fresh air first thing and it was a little extra exercise too. I just ate a bowl of cereal for breakfast and had some of the extra pineapple I cut up for last night’s dinner. I am hanging close to home today except for a faculty meeting that I have this afternoon over at school. My to-do list is sitting right on the counter and I look at it several times a day. It’s motivating me to keep moving and not waste any time now so that I don’t have to spend any vacation time making up for work I should have done before I left!

San Diego Warm-Up (dinner 3.31.09)

We had fish tacos for dinner which was definitely a warm up for the fast approaching trip to San Diego. I have to admit, I was very unsure of fish tacos before I tried them for the first time but once I had a bite, I was sold! It’s just the right mix of spice (ancho pepper, red onion), heat (jalapeno), acidity (lime juice) and sweet (pineapple). My favorite part is the avocado/jalapeno/garlic/cilantro/lime juice/water spread — I always make us a double batch because we hate to run out! Now this is not the meal to make when you are short on time because it involves a lot of prep work (cutting, chopping, marinating, etc), but if you have some extra time you have to try it! I had 4 tacos for my dinner – and I took a video of how I fill mine up, well as you will see, how I over-fill it!

We had a great afternoon – Will’s appointment was uneventful (that’s a good thing) and we took a nice walk in the afternoon to relax and get some fresh air. I am watching The Biggest Loser but also trying to get a few things done — the countdown is now 7 days until take-off!
