Make This Fresh Summer Sauce! (dinner 8.24.09)

Tonight I made us a fresh summer vegetable sauce to have over pasta for dinner. I used some of the veggies we got from Mike's dad and filled in with other ingredients where needed. Anyone can make this simple sauce and I definitely encourage you to try! It was filling, flavorful and loaded with healthy benefits (fiber, antioxidants, vitamins, minerals, good fat). Here's how I made it:


I made this sauce while Will took a nap this afternoon so he even had some for his dinner since it was already made (I usually cook after he goes to bed). He loved it so try it with your kids too if you have them. The clean up is done and I think I will do a little reading then go to sleep. That run I had this morning was great but it did tire me out so I am looking forward to resting up!
This Meal Provides Approximately: Grains = 3 ounces (-whole), Vegetables = 1.75 cups, Meat & Beans = 1-1.5 ounces, Oils = 3 teaspoons

This afternoon I had a reduced fat cheese stick and goldfish for a snack. I also had half of a banana that I shared with Will during his snack time.
- Saute shallots (3 large, sliced thin) and garlic (6-7 cloves, minced) in olive oil (6-8 Tablespoons)
- Once shallots have softened, add summer squash and zucchini (4-5 cups, cuts into small cubes)
- Saute until veggies have also softened slightly
- Add one can (28 oz) diced tomatoes and juice, bring to a simmer and allow to simmer for 15 minutes or until veggies are soft.
- Season with salt and fresh ground pepper.
- Add one can (15 oz) garbanzo beans (drained and rinsed).
- Serve over hot pasta, top with grated cheese and enjoy!
