Hiking!

Hiking is not only a great way to stay fit; it’s also a blast for the whole family. Yesterday we grabbed the backpacks and hit the trails of Chimney Rock Park for a family hike. What an amazing morning! The weather was gorgeous (sunny and 70 degrees) and every path we explored was filled with Mother Nature at her best. My gang was blown away when we saw frogs, turtles, and even a crayfish. Then we collected acorns for the squirrels, tossed a few rocks in the water, and followed a set of foot prints. The boys were entertained for more than an hour while we trekked up and down hills and
over a few brooks (and not one complaint). It was so much fun it didn’t feel like a workout, until this morning when my quads were a little sore!
More reasons to hit the trails……

Weekend Wrap-Up (8.29.09-8.30.09)
Monday, August 31, 2009 2:00 No CommentsAfter the long week I had last week, this weekend was much needed and appreciated. We didn’t go anywhere for the first time in a while and staying off the road gave me some extra time to get things done around my house. We visited with some friends and ate a few meals out of the house but otherwise we laid low. Saturday was a total washout but Sunday turned out to be a nice day so we got our fresh air and exercise then. It looks like it’s going to be another semi-hectic week coming up but at this point semi-hectic is baseline so I don’t think it’ll be too bad. We wrapped up the weekend and started the week with a nice homemade Sunday dinner like we always try to do. My basil plant had grown enough leaves to make another batch of pesto so I did that then mixed it into some whole wheat spaghetti and small white beans. We had a salad on the side. My other meals this weekend included: a scone and latte from Flour, tomato/mozzarella/basil sandwich made with awesome fresh picked tomatoes from my friend’s garden, grilled chicken, garden salad and macaroni salad, and challah bread french toast and a scrambled egg brunch.![]()
