Fajitas for Dinner (12.29.09)

I made chicken fajitas for dinner tonight and it felt good to be cutting, sauteing, stirring and serving again. I realized half way through this could have been our vegetarian meal of the week but since I have had a lot of vegetarian lunches, I just made one of my two fajitas without chicken.
