Serving Sizes

This week I started discussing serving sizes of the various food groups. Non-starchy vegetables are a group which are snubbed as a core food group but most health authorities are now suggesting a lot more than the original suggested five servings a day. The current suggestion is nine to eleven servings a day for optimal health. Before you get overwhelmed remember serving sizes of this food group are small and not as difficult as you might think to get in.
Here’s the deal on serving sizes on veggies. One cup of raw or a half cup of cooked is considered a serving size, equal to about five carbohydrates and twenty-five calories. For example, one medium carrot, or a half cup of mixed cooked fresh veggie soup could be considered a serving.
So you don’t enjoy vegetables? Health experts say it takes at least seven to ten tries to learn to like them.
