I'm going to be cooking later on for dinner, so I wanted to keep lunch prep to a minimum. What could be easier that heating up some soup and putting together a sandwich! Today I had tomato soup - Campbell's Healthy Choice --- and a sandwich with low sodium turkey, low fat muenster, mixed greens, light mayo on whole wheat toast. This is a great lunch when you want to keep the prep time to 5 minutes or less. You really can have "healthy fast food" sometimes. :)
The weather in NYC is still warm - amazing for November! I'm off to take Ollie for a midday walk. Hope everyone is having a great Friday.

Happy Friday Everyone!

What a week it's been!

This morning I had a very simple, but balanced, breakfast. I felt like having cereal so I picked some whole grain "O's" (Trader Joe's brand) with non fat milk. I also had a low fat yogurt, banana, tea, and some plum juice (yes, plum juice!). I don't have juice everyday, but it is a great way to stay hydrated and get in additional vitamins and minerals.Today I had PlumSmart plum juice with extra fiber. (A lot of fruit and veggie juices lose the fiber in processing, but they've added fiber to this one so you get 3g per serving. It's very refreshing and also an excellent source of vitamin C.

Nine grams of fiber and 33 grams of protein is what makes Chicken Thighs with Squash, Yams, and Dried Apricots a super satisfying meal. The squash and yams is what helps contribute to the high fiber content and it is a delicious way to get your veggie servings in for the day.

Each serving has 482 calories and 17 grams of fat. If you find this too high to fit into your daily plan you can reduce your servings of chicken (this recipe is analyzed for 2 chicken thighs) or you can exchange light meat chicken for the dark meat. A nutritional profile of this recipe is available.

Remember that you can reanalyze this recipe with the modifications that you make. Don't forget to save this recipe to your My ND Recipes.

I am at my last conference of the year way out in St. Louis, Missouri away from Boston and while I was out doing my customary walk around the new city taking in the culture, I noticed one very disturbing trend. What I saw was that probably 8 out of 10 people I passed were well overweight.

Literally everywhere I turned I saw more and more people moving slowly, deliberately, and looking like their overweight bodies were causing them physical harm as they walked.

I also noticed (or failed to notice) that there weren’t any health clubs. My hotel has a private one up on the 25th floor, but I couldn’t find one in downtown St. Louis... Now, I’m sure there is one, but unlike most major cities where there’s one on every corner, I couldn’t find one today.

All I can conclude is that it seems like all these people who may want to lose weight and take back their health have far less options.

So what if you’re like many of the people here who don’t have easy access to the gym, what are you supposed to do to get back in shape?

What’s your “fallback” when you can’t make it to the gym? Do you workout at home, take a long walk, go for a run outside, complete body weight exercises, play your favorite sport…?

Personally, I enjoy going for long walks and completing dumbbell workouts at home. I like knowing that no matter what comes up I can always fall back on both of these old, time-tested methods for burning fat and staying in shape.

“A recent large study found that 5,200 fifth-grade students who ate more fruits and vegetables (and less saturated fat) performed better when asked to read materials and answer written questions.” Eating well does more than just make your kids healthier, it may make them smarter too! What parent doesn't want that?

But there’s one hitch, we have to get the parents to eat vegetables first of course. We all know that parents have to be the role model. Children will do what their parents do more than what parents tell their kids to do.

But how do we get anyone to eat more vegetables in the first place? Start by checking Dana's blogs regularly for options. Even today's Asian salad is good! More veggies like snow peas, cabbage, and lettuce can be easily added as well.

Tomorrow I’ll share some of my ideas that may work for both parents and children. Readers what are some of your quick and easy favorite vegetable recipe ideas?

I haven't had so much fun in a long time. There was bars, rings, vault, trampolines, rope swings, hula hoops, cartwheels, and so much more all in one FABULOUS one hour class (taught by an incredible instructor, Mr. Shields). My body was worked HARD, but the fun factor never even let me notice. And by the end of the night we were all amazed by what we could do.....including my round off back handspring which I hadn't done since I was a kid and my friend Karli's front handspring over the vault. You rock ladies! Gymnastics is definitely still as much fun as I remembered....a perfect 10!
