Back To Cooking Dinner (8.3.09)
Tuesday, August 4, 2009 1:33I got back in my kitchen tonight and it felt good to cook dinner! I made an easy stir-fry with andouille chicken sausage, broccoli, asparagus, roasted red & yellow peppers, canned diced tomatoes, garlic and crushed red pepper. All that was sauteed in olive oil and then tossed with whole wheat pasta. I made enough to have leftovers because stir-fry usually reheats well. There are still a few things I want to get done today because I am heading out of my house early tomorrow. It’s going to be a scorcher so my girlfriend and I are fleeing the city and bringing the little ones to the beach. I got some things for lunch and snacks today so the cooler will be packed and hopefully we will have fun and stay cool near the water.
This Meal Provides Approximately: Grains = 2.25 ounces (+whole), Vegetables = 1.25 cups, Meat & Beans = 2.5-3 ounces, Oils = 3-4 teaspoons
