I cannot believe how much more frantic I feel on days when Will is not here. It’s like the time is so valuable I have to run around like a nut taking advantage of it. I am exhausting myself trying to get as many items checked off my list as I can, I think I may sleep better tonight than the days I run around after my little meatball. I just took a mental break and walked Bruce around the neighborhood – a kid free day should not stress me out! For my lunch I had some of the leftover chicken, broccoli and ziti that I made last night. It was an easy way to get in protein and veggies, plus it was fast which fits right in to my tempo today! I didn’t go into detail last night but this dish is one of my favorites to make because it’s just 6 simple ingredients and two pots. There are the obvious three (chix/broc/ziti) and then olive oil, garlic and low sodium chicken stock. If you have cheese on hand that’s a nice addition as well! The leftovers taste just as good as the first time, just make sure no one picks out all the chicken and broccoli leaving you with just pasta!

This Meal Provides Approximately: Grains = 2 ounces (-whole), Vegetables = 0.75 cup, Milk = 2 cups, Meat & Beans = 1.5 ounces, Oils = 2 teaspoons
