Today is a work day for me and I got started right in once Will was off to daycare. I was so ambitious to get going I just ate a half a banana and a latte for breakfast. I found myself pretty hungry around eleven o’clock so I had an early lunch at that time because the skimpy breakfast wasn’t going to hold me any longer. I reheated some of my veggie and chicken sausage stir-fry because I wanted to make sure I got some vegetables in at this meal. I really wanted a peanut butter and jelly bagel but yesterday was a bad day for veggie intake so I’m trying to get a little extra in today. I liked having the stir-fry because it was quick, easy and helped me clear something out of the fridge. Each time Will spends a day in daycare it’s so tempting to sit around and do things just for myself (read, get a manicure, sew, run, etc.) but the hands-free time is so valuable around the house that I have to stay focused on the necessary tasks at hand. I always still feel good at the end of one of these days so it really doesn’t matter if I spend it cleaning or lounging!! The Jones family never lets things get dull…our next big project is trying to sell our place so we are busy getting prepared for that these days — have to keep it interesting right?!

These Meal Provide Approximately: Grains = 2 ounces (+whole), Fruit = 0.5 cup, Vegetables = 1.25 cup, Milk = 1.5 cups, Meat & Beans = 2.5 ounces, Oils = 2 teaspoons
