Tonight I made us a fresh summer vegetable sauce to have over pasta for dinner. I used some of the veggies we got from Mike’s dad and filled in with other ingredients where needed. Anyone can make this simple sauce and I definitely encourage you to try! It was filling, flavorful and loaded with healthy benefits (fiber, antioxidants, vitamins, minerals, good fat). Here’s how I made it:

  • Saute shallots (3 large, sliced thin) and garlic (6-7 cloves, minced) in olive oil (6-8 Tablespoons)
  • Once shallots have softened, add summer squash and zucchini (4-5 cups, cuts into small cubes)
  • Saute until veggies have also softened slightly
  • Add one can (28 oz) diced tomatoes and juice, bring to a simmer and allow to simmer for 15 minutes or until veggies are soft.
  • Season with salt and fresh ground pepper.
  • Add one can (15 oz) garbanzo beans (drained and rinsed).
  • Serve over hot pasta, top with grated cheese and enjoy!

He loved it so try it with your kids too if you have them. The clean up is done and I think I will do a little reading then go to sleep. That run I had this morning was great but it did tire me out so I am looking forward to resting up!

This afternoon I had a reduced fat cheese stick and goldfish for a snack. I also had half of a banana that I shared with Will during his snack time.
