We had tacos for dinner last night and there were leftovers so I made myself a big salad for lunch using the seasoned beef, cheese, tomatoes, onions, green peppers and avocado over lettuce. There was more there than I thought so this salad should definitely keep me going through the afternoon. I used a little free time I had this morning (since the baby didn’t sleep well last night he actually took a great nap this morning) to make a nice banana bread. I can’t wait to have a slice for my afternoon snack! I used my favorite Cook’s Illustrated recipe to make it which is pretty healthy (lots of nuts for fats) and I swapped in a little whole wheat flour for regular white flour so it’ll be a good energy source when I need it. Hey, I may even be able to skip that second latte if I am feeling energized from my food instead!
