You would think I should have been able to cook dinner on a day when I didn’t have the baby but I used up all my time doing work. Luckily I had two servings of chili in the freezer so we ate that along with some cornbread. I usually make my own cornbread but I had to use a box mix this time. Do you know I had my choice of about seven different box mixes at the store today and all but two of them contained partially hydrogenated fats…one even contained partially hydrogenated lard, yuck. I was so happy when I came across one of my favorite brands, Hodgson Mills.
Not only did their cornbread mix have just five ingredients it was trans fat free, partially hydrogenated free AND was a blend of stone ground corn meal with stone ground whole wheat making it 100% whole grain! What a find and a great thing to keep in the house when you don’t have time to bake from scratch. The meal was very filling – a little chili goes a long way because it has beans and beef as protein sources in it…that’s why we always have leftovers, one serving is enough! I have a few more things I want to get done today and then I plan to relax and read if I don’t fall asleep before then.
