I spent the rest of my day shopping for chicken dinner ingredients, making chicken dinner and cleaning up chicken dinner. It’s always a project but it’s always worth it. We had the chicken along with mashed red potatoes, stuffing and zucchini. I had also bought a butternut squash but I had so many pots and pans going already I decided to save it. We were very resourceful tonight. Mike’s dad gave us a huge zucchini from his garden so I used half of it for our dinner and the other half got shredded up and mixed into a zucchini bread then Mike used the chicken carcass to make a homemade chicken soup! The extra work tonight should save me some effort tomorrow – I already know I have soup and bread ready to eat. I was planning on making an apple crisp but the chicken dinner filled us up and the bread/soup cooking took a lot of time so I’ll make that tomorrow instead. Eating the apples fresh has been very satisfying so the longer I can go without adding sugar and butter the better, right?!

This Meal Provides Approximately: Grains = 2 ounces, Vegetables = 2 cups, Milk = 1.5 cups (nonfat latte this afternoon), Meat & Beans = 3 ounces, Discretionary Calories = 60-70 kcals (gravy and a little butter in potatoes)

For a snack this afternoon I had a nonfat latte and some homemade roasted pumpkin seeds (from the pumpkin I made soup with).
