Plans with my sister fell through (my fault) so I had to make dinner here at home for Mike and myself. I made us big salads that were loaded with veggies and protein. I used some extra chicken breasts that I made last night along with hard boiled egg, small white beans, baby romaine, carrots, cucumbers, and scallions. I had cheese and avocado in the fridge but as I saw the salads growing in size with each additional ingredient I decided to stop at what I had and save those for another day. The salads were BIG, too big really. I actually saved about 1/3 of mine for tomorrow because I didn’t want to waste it. I definitely got my veggies in for the day which is good because I had not had any yet today! I am going to bed early because I need to be up early – ideally before Will wakes up so I can get a few things done before his morning routine begins. Bruce is being dropped off for a grooming so I’ll have a day free of dog-walks but I should run if I can fit it in, and if it’s not too hot and humid.
