Instead of hamburgers we had grilled chicken sandwiches for dinner tonight but unfortunately I had to eat mine on another partially burned piece of bread. This time it was Mike who was trying to do too many things at once and the top of my bun got a little crispier than I like it. Along with our sandwiches we had an orzo salad that I made with cucumber, red onion, diced tomatoes, feta cheese, red wine vinegar, lemon juice and olive oil. It was a nice light meal and I could clean it up quickly which was good because we had some major house cleaning to do. Mike is going to take a little vacation starting tomorrow after a very long stretch of hard work so I am really happy to have a lot of family fun planned this weekend and next week! First up — a trip to the outlets tomorrow morning and then a yummy dinner with my college roommate tomorrow night…I just may not be able to sleep tonight I am so excited!
